Sarah Taylor | MBA, RD, LD

Sarah brings over a decade of expertise in clinical nutrition, nutrition support, and informatics to FORMAT. Before co-founding the studio, she built her career at JPS Health Network in Fort Worth, serving as both a clinical dietitian and the Nutrition Informatics Manager.

Her passion for movement runs alongside her professional background in nutrition. Certified in Yoga, Yoga Sculpt, Strength, and Pilates, Sarah blends her love of fitness with her dietetics expertise to deliver a holistic, whole-body approach to wellness. She empowers clients to strengthen both body and mind while cultivating confidence that extends beyond the studio.

Sarah’s dual background allows her to take a unique and integrative approach—helping clients see that nourishing the body and staying active are inseparable parts of lasting health.

Julia Knipfer | MS, RD, LD

Julia's path to dietetics is deeply personal. Diagnosed with Type 1 diabetes, she discovered firsthand the profound impact that nutrition has on everyday life — and that became the foundation for everything she does as a dietitian. She knows that food is so much more than macros and meal plans — it shapes your energy, your mood, your focus, and how you show up every single day.

Julia holds a combined bachelor's and master's degree in nutrition from TCU and is a Registered Dietitian (RD) with a genuine passion for both the science of food and the joy of movement. As a RD and instructor at FORMAT, she brings a dual perspective to her work — helping clients see that how you move and how you eat are two sides of the same story.

One thing Julia stands firmly behind: food is one of the most powerful tools you have — and it should work for you, not against you. Julia focuses on building sustainable habits that support long-term health, energy, and confidence — whether you're working through something specific or just ready to stop guessing and start feeling good.
